Osteocalcin, the most abundant non-collagenous protein in bone, is vitamin K dependent. It is synthesized by osteoblasts during bone matrix formation and incorporated into bone.
Vitamin K is an essential co-factor for gamma-carboxlase enzymes. In the absence of vitamin K, y-carboxylation does not occur. Undercarboxylation of osteocalcin adversely affects its capacity to bind to bone mineral. In other words, it negatively impacts bone calcification.
